Five Miles of Heaven - Part 1

Not too long ago, I was referred to as a country girl.  I thought about it for a while and realized that it was a pretty good description of me.  I love the country side, the fields, the rivers, the creeks, the calves, the horses, and I get very excited at seeing the wild deer, and don't even be around me when I spot an eagle.   I live on a highway calleed CC. From my house to the next highway...AC, it is what I call five miles of heaven.  When I head home, I feel the days irritations roll off my shoulders as I turn on to CC. Each mile loses a little more of the day.  Yep, I am a country girl. The simple life describes the perfect life for me.  Ride along with e as I share some of my favorite sights.

Cherry Banana Custard Muffins?

Okay, okay, I confess, I spend a lot of time watching food network; perhaps too much time.  Lately, I have been wondering about just how realistic their ideas/recipes are for the average person.  One recipe in particular caught my attention just today...Cherry Banana Custard muffins.  The idea was to create a muffin without using flour...ya' know, no carbs. The recipe was presented by Valerie Bertinelli.  I have loved her since the early acting days, always felt she was someone that I could hang out with over lunch.  I am usually intrigued by her recipes.  This cherry banana thing seemed pretty uncomplicated and if good...well...I am always looking for a low carb option. So, the "muffin" essentially had five ingredients: Cherries, bananas, vanilla, powdered sugar  and eggs; there is the uncomplicated.  Just mash the bananas up really well, mix in the eggs, and pour over three frozen cherries; there is the easy part. Tips for Spaghetti Squash Lovers

Do you love spaghetti squash? I do! I love it so many different ways.  But, let me tell you, those shells are tough! So tough that I always think twice before using them. That is...until recently...while watching The Kitchen.  I got a great tip! You know that I love watching the foodies...and testing out their ideas, recipes, and tips...just to see if the average home cook can make them delicious. Well, this tip was a winner...for the most part..... The tip? Bake them whole first...hummm...Did you know that? I can't get over how much easier the squash was to work with... The only issue I found was getting all of the seeds out. The squash is hot and hard to handle. On this particular day, I was stocking the freezer...so I could let the squash cool down and then the handling of the squash and getting the seeds out was much easier.  Yep! This was a great team...it goes in the win column.

Veggie Sheet peeler/Sweet Potato Chip Recipe

My birthday gift this year was a popular kitchen mixer: A bright shiny red Kitchen Aide Mixer.  This gift came with a bread hook, a paddle mixer and a whisk. A Veggie Sheet Peeler attachment was added.  The Veggie Sheet Peeler attachment was the item that I was most excited about; oh the endless options that were running through my mind.  I couldn't wait to get started. Grabbing veggies, I rushed to get busy making sheets of veggies deliciousness! The Veggie Sheet Peeler came two blade, one for thinner cutting, and one for a thicker cut.  I selected the thinner blade for this first run.  The attachment was not hard to attach. It was, however, extremely sharp...I still have the wound several days later. After trying several different foods, including summer squash and pears, I cam to the conclusion that the veggie/fruits need to be firm. Welcome to The Parsnippidy Farmhouse.
