Five Miles of Heaven - Part 1

Not too long ago, I was referred to as a country girl.  I thought about it for a while and realized that it was a pretty good description of me.  I love the country side, the fields, the rivers, the creeks, the calves, the horses, and I get very excited at seeing the wild deer, and don't even be around me when I spot an eagle.  

I live on a highway calleed CC. From my house to the next highway...AC, it is what I call five miles of heaven.  When I head home, I feel the days irritations roll off my shoulders as I turn on to CC. Each mile loses a little more of the day. 

Yep, I am a country girl. The simple life describes the perfect life for me.

Cherry Banana Custard Muffins?

Okay, okay, I confess, I spend a lot of time watching food network; perhaps too much time.  Lately, I have been wondering about just how realistic their ideas/recipes are for the average person.  One recipe in particular caught my attention just today...Cherry Banana Custard muffins.  The idea was to create a muffin without using flour...ya' know, no carbs. The recipe was presented by Valerie Bertinelli.  I have loved her since the early acting days, always felt she was someone that I could hang out with over lunch.  I am usually intrigued by her recipes.  This cherry banana thing seemed pretty uncomplicated and if good...well...I am always looking for a low carb option. So, the "muffin" essentially had five ingredients: Cherries, bananas, vanilla, powdered sugar  and eggs; there is the uncomplicated.  Just mash the bananas up really well, mix in the eggs, and pour over three frozen cherries; there is the easy part.
